Based on an average market (live or on hoof) weight of 1,125 lbs and the average yield of 62.2%, the typical steer will produce a 762 lbs (dressed weight) carcass, aka "hanging weight." This will yield approximately 65 to 70% of your take-home meat and 30 to 35% loss (including fat and bone).
This means, 1,225 lb steer x 62.2% = 762 lbs hanging weight x 65-70% = 495 to 533 lbs of take-home USDA choice beef.
